Tortilla Soup Recipe
I love a good bowl of soup, especially if it's jam packed full of my favourite ingredients like avocado and sour cream. Chris' mom used to make this one all the time. I used to get so excited when I would go to her house and see a big pot on the stove! This soup is great any time of year and freezes well without the toppings. \
Ingredients
1 onion chopped
3 cloves of garlic minced
1 tbsp olive oil
3 tsp chili powder
1 tsp dried oregano
3 tsp cumin powder
1 (28 oz) can crushed tomatoes
1 litre box chicken broth
1 ear of corn, corn cut off the cob (I like to double the corn because it's my fave)
1 (4 oz) can chopped green chili peppers or 1-2 jalapeno peppers
1 (15oz) can of black beans (rinsed and drained)
1/4 cup fresh cilantro chopped
2 boneless skinless chicken breasts cooked and chopped into cubes (in a pinch ill use pre cooked shredded chicken)
Tortilla chips
Shredded Monterey jack cheese
1 avocado
Sour cream (optional)
Directions
1. In a large pot, sauté onion in oil. Once onion is cooked add garlic, chili powder, oregano, cumin and stir.
2. Add crushed tomatoes, chicken broth, corn, black beans, cilantro, cooked chicken, and bring to a boil.
3. Turn heat down and simmer for 10-15 minutes, stirring every so often.
4. Serve with chips, avocado, cheese and sour cream on top.
